Week 18!!! Sweet Potato!!!! :)

Baby is the size of a Sweet Potato!!!




I love sweet potatoes and not only in the fall!  They are wonderful, and not to mention....really good for you.  I hope you guys love the below recipe as much as I do.  The sweet potatoes go great with any meal.  I especially like them as a center to a vegetarian meal, or as a side with pork roast.  The best part about it: quick, easy, feels like comfort food, but its totally 100% healthy!

Roasted Sweet Potatoes with Pumpkin Pie Spice:
Ingredients:
2 Sweet Potatoes (chopped or cubed)
Pumpkin Pie Spice (you can find it on the spice aisle)

Preheat oven to 425.  Line a baking sheet with foil and cover with chopped/cubed sweet potato pieces.  Sprinkle pumpkin pie spice over sweet potatoes (I like a lot, but you can put how much ever you prefer) and bake for 20 minutes or until soft.  Enjoy!!! :)
