Baby is the size of a Pomegranate!!
Baby is the size of a pomegranate and is growing stronger every day!!! I am so excited to be past the halfway mark, but there is much to be done to prepare!
We are entering summer and although the pomegranate is seasonal in the fall and winter, the juice is sooo refreshing, and in the kind of intense summer heat of Houston, I am REALLY looking forward to having some. If you haven't ever prepared a pomegranate, the best way to separate out the seeds is by placing the fruit in a bowl of water. The seeds should sink to the bottom and the remaining fruit will begin to float.
So....favorite pomegranate treat is probably a pomegranate and lime cocktail BUT I think since its summer and I am living in mocktail land, I am going to attempt to make pomegranate and lime popsicles!
Pomegranate Limeade Popsicle
Ingredients:
1/3 cup lime juice
1/2 cup sugar
2 1/2 cups water
1 pomegranate
Dixie cups
Directions:
1. Mix the lime juice, sugar and water thoroughly until all the sugar is completely dissolved. This recipe for limeade is pretty sweet, but the sweetness will decrease once it is frozen.
2. Add the mixture to small/medium dixie cups or whatever you want to use to freeze the popsicles in, but make sure not to completely fill them.
3. Seed the pomegranate. Easiest to cut it in half and put it in a bowl of water. As you begin to pull it apart under water the seeds should sink to the bottom and the membrane will float.
4. Add the seeds to the glasses. To keep the seeds dispersed throughout you can layer the mixture with the seeds. Freezing each layer for 10 mins or so and adding seeds then more mixture each time. Once the cups are filled cover with a small piece of foil and put your popsicle stick through the center (the foil will keep the stick in place)5. Make sure to freeze overnight so your popsicles are thoroughly frozen which will keep the pomegranate seeds intact.
6. Once you are ready to serve peel off the foil and the dixie cup at the seam!
