
Baby is the size of a Papaya!!! Wow!!!!
I can't believe how big the baby is getting!! Papayas are huge!!! I can only imagine how much larger the baby is going to grow!!!
I haven't eaten a lot of papaya before, but I do enjoy this fruit. I am not a huge tropical fruit fan, but this one has similar qualities to that of a squash. So, while many people may eat this in a salsa or a tropical fruit salad, I actually enjoy it roasted! This recipe is a little sweet and can be served as a fruit desert, or in place of a side dish such as squash or potato.
Ingredients:
2 T light brown sugar
1/4 tsp ground ginger
2 medium papayas, halved and seeded
1/4 tsp cayenne pepper
1 lime cut into 4 wedges
Directions:
Preheat oven to 450. Stir ginger and sugar together in a small bowl. Arrange papaya halves right side up in a pyrex baking dish, and sprinkle the sugar/ginger mixture evenly over each one. Bake 30-40 minutes, or until the papaya edges are darkening and the sugar mixture is bubbling. While baking, check 2 or 3 times and either brush or spoon sugar mixture, that has drained into the center, around the edges of the papaya. Remove from oven and sprinkle with cayenne and serve with a lime wedge.
