Week 7!!! Blueberry!!!

Baby is the size of a blueberry!!!


My favorite recipe incorporating blueberries comes from one of our favorite places in all of DC, Eastern Market!  We purchased our flag pallet there (see below) as well as many other fun crafts- from photography to sunglasses- and most of our fresh food.   

Eastern Market has been on Capitol Hill since 1837 and is the last surviving market out of the original four.  Monday through Friday it operates like an oldtime food market featuring booths and counters with everything from fresh live whole crabs to polish cheeses.  Then, on the weekend, it explodes adding countless fresh produce stands and all kinds of artists and crafts outside in booths. 




So....Back to Blueberries!!!  An old Eastern Market staple, called Market Lunch (link below), is known for none other than Blueberry Buckwheat Pankcakes, known on the street as "blue bucks"!  People of all kinds and from all places come and wait for up to 3 hours on the weekends for a stack of blue bucks....BUT be prepared, once you finally make it to the front of the line you MUST know what you want and how to order or (like the soup natzi) you will get sent to the back of the line!





Here is my attempts at Blue Bucks!

Ingredients

  • 3/4 cup buckwheat flour
  • 3/4 cup whole-wheat pastry flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 3/4 cup nonfat milk
  • 1 tablespoon honey
  • 2 large eggs
  • 2 tablespoons canola oil
  • 2 cups blueberries, divided
  • 1/2 cup real maple syrup
Directions
In a large bowl whisk together the flours, baking powder, baking soda and salt. In another bowl, beat together the buttermilk, non-fat milk, honey, eggs, and oil. Stir the wet ingredients into the dry ingredients, mixing only enough to combine them. Stir in 1 cup of berries.

Preheat a large nonstick griddle or skillet over a medium flame. Ladle the batter onto the skillet with a 1/4-cup measure. Flip the pancake when it is golden brown on the bottom and bubbles are forming on top, about 1 1/2 minutes. Cook the other side until golden brown, about 1 1/2 minutes. Serve topped with more blueberries and the maple syrup.
